The crazy thing about that is that the instruments usually are more expensive because they are more or less custom made, which means they're unique. Reason: Every guitar with that finish is a "normal" guitar (normal finish) and some guitar- (or other instruments-) tech takes a piece of sandpaper and gives it the "older" touch. Basically, it's a cool idea, but if I wanted to have a guitar which looks old I'd use it as often as possible to create the same results as some guy rubbing the finish off my new instrument.
